Nystose is a fructo-oligosaccharide (FOS), consisting of 3 fructose residues linked by β 2,1 bonds to a glucose residue. It cannot be broken down by human digestive enzymes, but it is used by beneficial bacteria such as Lactobacillus acidophilus and Bifidobacteria in the colon.
